In the Kitchen with Katie: Æblepandekager

This is our first year doing a geography program. Well, other than what we do for history. During the first week of school, Katie studied Denmark. And we discovered a series of books about the countries of the world - and they each have a few recipes in them. You should have seen us in the library last week, pulling out all the books to look at the recipes. And trying to decide what country should come next. Because curriculum should be based on taste buds.


When I posted my week in review, I asked the burning question: "do you want to learn how to make Æblepandekager?" And the clamor for the recipe has been deafening. The ringing in my ears keeps me up at night. And all the emails demanding that I share the recipe. I am so sorry that I could not respond to each of you individually. So, without further ado, Karen, thanks for asking, and here is the recipe...

Our cast of characters:

First, Katie scrambled the eggs and then added the milk.
And then in another bowl she combined the dry ingredients.
And then rather than adding the dry ingredients to the wet, Katie added the wet to the dry. She can be a rebel like that.
But then she got back in line with the directions and added cream.
Then we took a brief break from mixing so that we could core, peel and slice some apples.Which we then fried in butter. Because isn't that what you think of when you think of apples? Must fry in butter? And look at what happens to our apples. They shrank! Why don't I shrink when I eat things fried in butter?
We put our fried and shrunken apples in a baking dish and added the batter.
And baked it. The recipe says at 500 degrees. I was sure it was a mistake. I have never cooked anything at 500 before. But, I wasn't up for being a rebel where temperature was concerned, so I baked at 500. And in 20 minutes I had a slighly overflowing "pancake." I added some butter and sprinkled generously with cinnamon and sugar.
And instead of baking it more, I just turned off the oven to let the butter melt and the Æblepandekager brown a bit. It kind of comes out of the pan. But it never spilled over.
And when it cooled, the whole thing sank back into the pan. Kind of like shrinking. Again. I am thinking that there is a shrinking conspiracy. Our recipe says to sprinkle the top with lemon juice. I didn't have any. So we left that part out. Back to being rebels...
Serve. Eat. And it gets a big thumbs up!
Here is our simple recipe:

6 eggs
½ cup milk
1 cup flour
1 cup sugar
½ teaspoon salt
½ cup cream
3 apples -- peeled & sliced
Butter
Sugar /Cinnamon
1 lemon -- juice only

Beat the eggs lightly. Add the milk.

Combine the flour, sugar and salt. Stir the flour mixture into the egg mixture, stirring in the ½ cup of cream as you mix.

Fry the apple slices in butter in a skillet.

Cover the bottom of an oven-proof baking dish, or heavy skillet, with apples.

Pour the batter over slices and bake in a preheated 500º oven.

When nearly done (20 or 25 minutes, or until the pancake looks like a cooked omelet), remove from oven and sprinkle here and there with a mixture of sugar and cinnamon to taste. Place dabs of butter on the pancake and return to oven until browned.

Just before serving, sprinkle with lemon juice.

This cooking session with Katie had me snorting with laughter. She added the wet to the dry instead of the dry to the wet or whatever...REBEL!!!

And I don't understand why I don't shrink when I cook or when I eat things cooked in butter. It's just not right!

I love picturing y'all going through all the books on the shelves in the library looking for a good country/recipe.

I haven't made any dishes from recipes on blogs, but I keep meaning to. There have been some good ones...on your site and others, but I just haven't made myself do it yet. I will...

Oh man! This looks oh so yummy! I don't think I've ever tried one of your recipes come to think of is...but I'm sure gonna start with this one! Bummer I just got back on track with eating and working out though...I'll try it on my day off :) Have an extra piece for me today, K?

This looks INCREDIBLE. And yes, we will try this soon, as we love any combination of apples, cream, butter, cinnamon, etc.

A while back on the SITS recipe site someone posted a crock-pot lasagna that I tried and it was really good and super easy. A keeper!

And I'm waiting for just the right time to make your sausage pinwheels. Rhea--You should have seen us at the library. Too bad for anyone else that wanted to come down that aisle. Katie found a recipe for strawberry Crepes...from Switzerland I believe...so she really wants to study that. But I am trying to be a good teacher...and have us spread the love to all the continents before we head back to Europe.

I think that all the recipes I have made are from Pioneer Woman. Her brisket is to die for. And then there was those Apple dumplings. Oh, and the twice baked potatoes. Yumola.

Staci--It was yummy. But we did this a few weeks ago. I am just now getting around to posting it. I thought I would make all my fans wait a bit for the big reveal. You know, keep you coming back each day to see if I had posted it yet. *snort*

But, I am doing the no carb thing. I did have to try it...so I had a few bites...and the rest of my family demolished it.

Tiffany--I am glad that there was some giggling while you read. I always like to hear that :-)

And the book series? Ummm...I can't recall. And I don't have any here right now. BUT, I think it's the Cultures of the World series. I think. I'll let you know next time I pick stuff up from the library.

Lula--It is wrong isn't it?! If apples shrink, why don't I? It is a yummy recipe. You'll have to let me know if you try it out...

Gina--Oh, I have not tried that PW recipe. And even though this is called Danish Apple pancakes...it's more like cake. But I suppose as Bill Cosby says - it has eggs, milk, and fruit in it...so why not have it for breakfast!

IM--I cook - but I am trying to train my children to cook. And to actually help rather than hinder. Katie even starts a cooking class tomorrow morning.

I saw you on BATW... and thought I would drop by. I live in HUngary and I will definitely try this recipe. It is fun making things from different countries... although I don't always trust American recipes for European dishes because they usually aren't the same. But that doesn't matter, as long as the recipe is yummy!

This does look good... but I don't like cooked fruit, so I probably would not try this (sorry!)

I have written down or printed off a few bloggers' recipes (including your sausage pinwheels) but so far the only one I've tried is the crockpot lasagna that was featured in SITS recipes. It was DEEE-LISH!!!!!

Julie--Welcome! I remember when Darcy made over your blog - I love what she did. I know what you mean about recipes being Americanized. I have no idea if this one has or not...I guess I'll need to hunt down someone from Denmark to let me know :-)

Bridget--I agree. When I read 500 I thought for sure it was a misprint. I went online to try and find another version of the recipe - and I found two - exactly the same - with the 500. (Well, just between you and me, I found another that said to only use two tablespoons of sugar rather than a cup. I figured we couldn't go wrong with all that sugar. And I think I was right.) So, if you try it...do the 500!

Heather--You had a great post today. About stuff I have really been thinking about. And now you just need to make some Danish pancakes to top off your day...

Shannon--You know, I am so with you. If it doesn't have chocolate, I am really not interested. Until I made Pioneer Woman's Apple Dumplings. And now. If it has enough butter, sugar, or Mountain dew, I am in. The pancake is really good...

Yes, I can't nderstand why evewrything shrinks when I cook in butter, but I don't. Something is not right there!!!

I've made your Chicken Cordon Bleu ... it was really, really good!!

I'm going to try the Chicken Oriental Salad, I have all the ingredients.

I've made some other recipes that I've found on blogs. At Home With The Farmer's Wife has a rather yummy Slightly Curried Chicken Salad on her blog and a link to a Buttermilk Pie that sounds out of this world. I also made the Enchilada Pie that is on Saucy Eats. That was good...

Thanks so much for posting that Apple Pancake recipe. I make one cooked breakfast a week, on Sunday. Guess what we are having this Sunday!!! I'll lt you know how it turns out.

Gracious, that looks yummy! Maybe you aren't shrinking because you haven't been fried in butter? I'm going to go try that, I could use a little shrink action...

(Rereading that last phrase, I should mention it's true in a variety of ways!) =P

Yes! I do make blog recipes---or at least versions of them. I have, sadly, not made any of yours. THey seem rather "southern" :).....or "danish". Really---this looks yummy and I might have to give it a try!

I try recipes from the blog world all the time. My all time favorites come from Pioneer Woman. That lady can cook her hiney off...and it's a good thing since her recipes are not low calorie or low fat!

I write down the recipes that appeal to me from blog land and put them aside. Then I forget about them. I mean to make them. But, yup, I forget. Must be too much diet coke.
I love how Katie is such a willing participant on your blog! My kids run as far away as possible...sigh...

You raise a really good question. Why IS it that we don't shrink after eating things fried in butter? Hmm...

I've made PW's Risotto and it's AWESOME. That's my only blog recipe that I've actually cooked. I've got 2 of your written down, but just haven't tried them yet. I'm lazy that way.
