Have ya'll checked out Katie's blog? Did you know it is called "I like Pi?" Well, not only does she have an affinity for mathematical concepts. But she also likes pie. All kinds of pie. And Katie is quite happy to tell you. Or anyone. How much she likes pie.
She says Pi instead of "hi." And when she went to a girl scout lock-in on her actual birthday. She turned down the opportunity to take cake. Or cupcakes. Because they were not pie.
So...naturally for her birthday celebration. We had pie. Peanut butter pie.
A lot of people have peanut butter pie recipes. But this one is a smidge different. Because it adds a layer of chocolate.
Here are our ingredients.
The first thing to do is to add the chocolate shell to the graham cracker crust. And then freeze.
Mix together 2 blocks of softened cream cheese and a box of confectioners sugar.
Add a cup of creamy peanut butter.
And then mix in two containers of cool whip.
Take your frozen shells out of the freezer. And add your peanut butter mixture.Freeze for about an hour, and then put in the fridge.
You can add chocolate shavings. Crushed peanut butter cups. Or you can be a slacker and forget to add toppings serve it plain.
Candles.
And singing. Are optional.
Here is our simple recipe.
2 graham cracker crusts
2 8oz blocks of cream cheese, softened
1lb box of confectioners sugar
Chocolate - magic shell
1 cup peanut butter (we use creamy - but crunchy would work)
16oz cool whip
Put a layer of magic shell on both of pie crusts. Freeze for about an hour.
Cream together the cream cheese and confectioners sugar.
Add the peanut butter.
And then the cool whip.
Divide between the pie crusts.
Add any toppings desired (chocolate shavings, cool whip, peanut butter cup crumbles) and then freeeze for an hour. Keep refrigerated.

She really does like pi. That's so cool. And unique. I don't know many kids who would want peanut butter pie on their birthday. Very cool kid you've got there, Kat!!
I like Pi too, and cookies and chips. In fact, I never met a mathematical equation I didn't like!
Now this is a recipe I will try! Forget that grits casserole! ;)
I make a similar one:
1 oreo cookie pie crust
1/2 cup peanut butter
3 Tbsp milk
1 cup powdered sugar
1 tsp vanilla
1 cup Cool Whip
Mix ingredients together, pour into pie crust and freeze for a few hours until firm. Then dig in and enjoy!
Now that sounds good.
I would love to try it but I have a problem - what is cool whip?
That looks delish! I'll have to try that one day.
umm hello delisciousness!!
Katie is one smart girl to like pi over cake or cookies!
Once again, I'm left drooling on my keyboard and having the unmistakable urge to lick the screen.
I know - as if you didn't have enough reason to get that restraining order, now you do ;D
peanut. butter. pie. Oh my stars! I am trying SOOOOO hard to stay on this fruit kick and this stuff is killing me I tell ya :)!
Happy Birthday daughter of Kat ;)!(I know her name! I promise!)
Not loving it. Sorry. Could you please figure out a way to make either Hot Tamale or Bottle Caps pie? Thanks.
My mouth is watering, and I think you may have wrecked my diet up for the day!
Can't wait to check out Katie's blog!
I LOVE this pie recipe! It looks so easy - and so darn tasty. My only problem is that I don't have any pre-made pie crusts... darnit!
I'm printing the recipe and saving it for the future.
Happy Birthday Katie!
The pie looks delicious...I'm putting this one in my recipe file.
First HAPPY BIRTHDAY
Second Great sounding Pie and easy
Third I love her butterfly shirt
Sounds like a good time had by all.
YUM. *said with my teeth grinding together in a low growl*
But, I will never make one because I am too lazy. I will just get a Resse Cup and pretend.
Ahh..Peanut Butter Pie. I can't really eat it without going into a sugar coma, but my grandmother's were so good..people would fight over them..
Happy Birthday little lady! And that pie was beautiful!
Remind me to never come over to your blog hungry.
'Cause I'll just print off every yummy recipe you post and go make them all. At the same time. And I'm not sure how well Scottish eggs and peanut butter pie will go together.
Just sayin'.
Oh, and a belated happy birthday, Katie.
Let me just say for the record. That WHEN I come to Hotlanta again I am seriously expecting a big honking slice of this on a plate. Oh yeah.
It looks and sounds so yummy fantastic.
That just looks yummy.
And when in the world did Katie get so old? I keep seeing that little girl Katie. Where is she???
Yummy! When can I come over?!
That looks delish. I LOVE peanut butter pie.
that looks fabulous! Jeff would totally love that pie. I may have to make it for him b/c he is such a great guy!
My SIL loves peanut butter and chocolate. I am saving this recipe to make for her birthday!
We all like Pie or Pi better too!
Yummers! I am thinking sugar rush and diet killer! But still....we must celebrate Katie's day, right? ALL OF US...even folks who stopped by your blog for the very first time EVER!!!!
I know nothing about Pi .. but Pie?
Dude, had they taught Pie in highschool, I would've totally applied myself and not cheated my way through.

oh. emm. gee.
i need one of those...like right now.

i might have licked the screen while reading this, but it's okay, my hubby doesn't mind peanut butter breath.
HAHAHAHA.
ohhhhhhhh Magic Shell, come to mama....
I have SO been hoping you would post this recipe! It sounds delish and maybe I just give it a try for my own birthday. Thanks Katie, thanks Kat!
I LOVE LOVE LOVE that you have Snow Patrol's "Chocolate" on here for today's song. That's just brilliant, my friend. Libbey knows every word of this song and always asks, "Why is it called chocolate?" Ha.
I never met a peanut butter pie I didn't like.
Oh this is so not good for my diet! How many calories is it to lick the computer screen? Hehehe!
Oh my gosh! I'm so glad I stopped by. I love peanut butter pie with a passion! I just found a low-fat recipe too!
Peanut butter. Chocolate. Pie. I love this blog!
Actually I have a to-die-for peanut butter pie recipe that is meant to be frozen. I need to dig that out and make one.
When it's at least 35 degrees warmer cause brrrrrrrrrrrr, it's too cold for frozen treats.
Oh who am I kidding? Crank the heat and gimmee ice cream!
Oh how funny. So why couldn't she take pie with her to the lockout to share? ;)
And I could SOOOOO go for this pie. Without the peanut butter. Maybe I could do it with Nutella instead.
I know I'm a freak for not liking peanut butter, but I'll deal with it.
Doesn't anyone have a yummy desert besides jello that I can eat on my diet? Sigh. That looks soooooo good.
Mmmmmm, two of my favorite things in the whole world...peanut butter and chocolate!
Holy moly ... I just gained 5 pounds looking at that pie! YUMMO ... you're my kinda gal Katie!
Yummo!!
Hubby is such a big PB fan, this will be a huge hit in our house!
Oh my yummy, goody, goodness. You think this will fit into my Think Thin Thursday plan? I could use low fat cream cheese & PB, no?? LOL
Ah heck! It's pie! Gimme the good stuff!
OH MY GOSH!!!! This pie looks DIVINE I tell ya!!! I'm alllll about it! Brian's mother used to make a peanut butter ice cream pie that was similar...yummy! Brian loves all things peanut butter ;) I'll have to give it a whirl---maybe Thursday!
I don't know if it is that I'm just really hungry right now or what, but that pie looks absolutely DELICIOUS!!! I am definitely going to give it a try!
way yummy!!! i used to make a peanut butter cup cheesecake, but haven't in years. Now I want to dig it out and get to work. My Sam is the pie creator here, for the most part. He loved Home Ec and took it for three years (he wanted to take it this year but he went with shop and art instead) and loves to make desserts.
I'm pretty fond of Pi :-)
And that one looks very good !!
:) We'll have to try this. You always manage to make me hungry lately. Darn you & Katie & all your pi/pies.
Oh, I'm stealing this one for sure. Pi rocks!!!
She is so darn cute and that pie is making my mouth water...at midnight...and I am up way past my bedtime...
This sounds delectable! I am obsessed with everything peanut butter. I shall have to try it!
